Domaine Emmanuel Giboulot, Cote de Beaune Les Pierres Blanches Rouge 2022

A 100% Pinot Noir with an explosion of red fruits– cherries, blackberries and cassis. A hint of soft spices and violets. Alive and vibrant, with soft tannins, a mineral finish and long length. Elegant and balanced, with lots of freshness. From old vines planted at low density, growing on clay and limestone draining on gravel. Cultivated biodynamically since 1985, the grapes are picked by hand, 100% destemmed and fermented in open wooden vats. The press and free-run juice are blended and allowed to settle. Fermentation lasts a full lunar cycle. The extraction of aromas, tannins and colour is natural (no yeasts, enzymes or heat) and is done by traditional pumping over and punching down. The wine is then aged for 18 months in only old oak barrels.
