Domaine Paul Pillot

Paul Pillot’s estate is a family estate in Chassagne-Montrachet, in which passion for wines has been handed down from generation to generation.

 

In 1968, Paul Pillot took over his father’s wine farm. A few decades later, his children joined him with enthusiasm on this project. Thierry and his sister Chrystelle have run the estate since the early 2000’s.

 

The 13-hectare vineyard is located mainly in Chassagne-Montrachet, Saint Aubin and Santenay. The production is 70% white wines and 30% red wines with annual sales of 70,000 bottles worldwide.

 

Paul Pillot’s estate produces authentic wines in accordance with the soil. Thierry has pursued a philosophy of reducing his intervention both in the vineyard and in the cellar, resulting in extremely fine wines that provide an excellent look at the breadth of Chassagne terroir, without the use of herbicide. The wines are aged in oak barrels (20% of new oak) between 12 and 18 months.
